Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (3.4-ounce) package instant coconut pudding mix
  • 2 cups cold milk
  • 1 cup whipped topping (like Cool Whip)
  • ½ cup shredded coconut, toasted (for garnish)

Instructions

  1. Preheat the oven to 350°F. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes, then remove from the oven and let cool.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together the coconut pudding mix and cold milk until smooth and thickened, about 2 minutes.
  4. Gently fold the pudding mixture into the cream cheese mixture until fully combined. Then, fold in the whipped topping until smooth.
  5. Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly. Cover and refrigerate for at least 4 hours, or until set.
  6. Before serving, sprinkle the toasted shredded coconut on top of the cheesecake for garnish. Slice and serve chilled.
