Description

Coconut Stuffed French Toast is a delightful breakfast dish featuring thick slices of bread filled with a creamy coconut mixture, then dipped in a rich egg batter and cooked to golden perfection.

Ingredients

  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 4 slices of thick bread (such as brioche or challah)
  • 1 cup sweetened shredded coconut
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • Butter or oil for frying
  • Maple syrup for serving

Instructions

  1. In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  2. In another bowl, mix the softened cream cheese, shredded coconut, and powdered sugar until smooth.
  3. Spread the coconut cream cheese mixture evenly on two slices of bread. Top with the remaining slices to form sandwiches.
  4. Heat a skillet or griddle over medium heat and add a little butter or oil to coat the surface.
  5. Dip each sandwich into the egg mixture, ensuring both sides are well coated.
  6. Place the soaked sandwiches on the skillet and cook for about 3-4 minutes on each side, or until golden brown.
  7. Remove from the skillet and serve warm with maple syrup drizzled on top.

Notes

  • For a tropical twist, add a tablespoon of coconut extract to the egg mixture.
  • You can also substitute the cream cheese with mascarpone for a richer filling.
