Ingredients
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 4 slices of thick bread (such as brioche or challah)
- 1 cup sweetened shredded coconut
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- Butter or oil for frying
- Maple syrup for serving
Instructions
- In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
- In another bowl, mix the softened cream cheese, shredded coconut, and powdered sugar until smooth.
- Spread the coconut cream cheese mixture evenly on two slices of bread. Top with the remaining slices to form sandwiches.
- Heat a skillet or griddle over medium heat and add a little butter or oil to coat the surface.
- Dip each sandwich into the egg mixture, ensuring both sides are well coated.
- Place the soaked sandwiches on the skillet and cook for about 3-4 minutes on each side, or until golden brown.
- Remove from the skillet and serve warm with maple syrup drizzled on top.
Notes
- For a tropical twist, add a tablespoon of coconut extract to the egg mixture.
