Ingredients

For the Cake:

  • All-purpose flour
  • Dark brown sugar
  • Granulated sugar
  • Baking powder
  • Ground cinnamon
  • Salt
  • Unsalted butter
  • Egg whites
  • Buttermilk
  • Vegetable oil
  • Vanilla extract

For the Frosting:

  • Unsalted butter
  • Powdered sugar
  • Vanilla extract
  • Heavy cream
  • Cookie butter

For the Filling and Decoration:

  • Cookie butter (drizzled between layers)
  • Crushed Biscoff cookies

Instructions

  1. Preheat & Prepare: Preheat oven to 350°F and grease three 8-inch cake pans.
  2. Make the Batter: Combine dry ingredients, then mix in butter until crumbly. Add egg whites, buttermilk, and vanilla extract, mixing until smooth.
  3. Bake: Divide the batter evenly into cake pans and bake for 33-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  4. Prepare Frosting: Beat butter until smooth. Gradually add powdered sugar, then mix in vanilla extract and heavy cream. Set aside 2 cups of frosting and mix with cookie butter for added flavor.
  5. Assemble the Cake: Spread a layer of vanilla frosting on the first cake layer. Add cookie butter frosting and drizzle warm cookie butter on top. Repeat for remaining layers.
  6. Chill & Decorate: Apply a crumb coat and chill before adding the final layer of frosting. Smooth, then press crushed Biscoff cookies around the cake. Drizzle warm cookie butter over the top and pipe decorative frosting swirls.
  7. Serve & Enjoy: Slice and serve this indulgent treat!
