Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup cookie butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup crushed graham crackers
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup mini chocolate chips (optional)
  • Whipped cream for topping (optional)

Instructions

  1. In a medium bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are well coated. Divide the mixture evenly among 4 serving cups, pressing it down to form a crust layer at the bottom.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar, cookie butter, and vanilla extract, and continue to beat until well combined and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cookie butter mixture until fully incorporated.
  4. Spoon the cheesecake filling over the graham cracker crust in each cup, filling them to the top.
  5. If desired, sprinkle mini chocolate chips on top of each cheesecake cup for added texture and flavor.
  6. Refrigerate the cheesecake cups for at least 2 hours to allow them to set.
