Description

Ingredients

  • 1 cup Biscoff cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup cookie butter (Biscoff spread)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup Biscoff cookie crumbs (for topping)

Instructions

  1. In a medium bowl, combine 1 cup of Biscoff cookie crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust. Refrigerate for 15 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  3. Add the cookie butter, powdered sugar, and vanilla extract to the cream cheese. Beat until well combined and smooth.
  4. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cookie butter mixture until fully incorporated.
  5. Pour the filling into the chilled crust and smooth the top with a spatula.
  6. Sprinkle 1/2 cup of Biscoff cookie crumbs on top of the pie for garnish.
  7. Refrigerate the pie for at least 4 hours, or overnight, to allow it to set properly.
