Ingredients
Cookie Base
- 1 box chocolate cake mix (15.25 oz)
- 1/2 cup canola oil
- 2 large eggs
Mint Frosting
- 1/2 cup unsalted butter, room temperature
- 2 cups powdered sugar
- 2–4 tbsp heavy cream
- 1 tsp mint extract
- 1/4 tsp salt
- Green food coloring (as needed)
Chocolate Ganache
- 1 cup semi-sweet chocolate chips
- 1/3 cup heavy cream
Instructions
- Prepare the Chocolate Cookies
- Preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper.
- In a large bowl, mix chocolate cake mix, canola oil, and eggs until smooth.
- Scoop 2-tablespoon-sized dough balls onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are set. Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
- Make the Mint Frosting
- Beat unsalted butter until creamy. Gradually mix in powdered sugar.
- Add 2 tbsp heavy cream, mint extract, and salt. Adjust consistency with additional cream.
- Add green food coloring to desired shade.
- Frost the Cookies
- Spread a generous layer of mint frosting on each cooled cookie. Chill cookies in the refrigerator while preparing ganache.
- Prepare the Chocolate Ganache
- Heat heavy cream until just about to boil. Pour over chocolate chips in a heatproof bowl.
- Let sit for 1 minute, then whisk until smooth. Cool for 10-15 minutes.
- Assemble the Cookies
- Spread a layer of ganache over the frosted cookies. Let set at room temperature or refrigerate until ganache firms up.
