Ingredients

Cookie Base

  • 1 box chocolate cake mix (15.25 oz)
  • 1/2 cup canola oil
  • 2 large eggs

Mint Frosting

  • 1/2 cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 24 tbsp heavy cream
  • 1 tsp mint extract
  • 1/4 tsp salt
  • Green food coloring (as needed)

Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • 1/3 cup heavy cream

Instructions

  • Prepare the Chocolate Cookies
    • Preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper.
    • In a large bowl, mix chocolate cake mix, canola oil, and eggs until smooth.
    • Scoop 2-tablespoon-sized dough balls onto prepared baking sheets, spacing 2 inches apart.
    • Bake for 10-12 minutes until edges are set. Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
  • Make the Mint Frosting
    • Beat unsalted butter until creamy. Gradually mix in powdered sugar.
    • Add 2 tbsp heavy cream, mint extract, and salt. Adjust consistency with additional cream.
    • Add green food coloring to desired shade.
  • Frost the Cookies
    • Spread a generous layer of mint frosting on each cooled cookie. Chill cookies in the refrigerator while preparing ganache.
  • Prepare the Chocolate Ganache
    • Heat heavy cream until just about to boil. Pour over chocolate chips in a heatproof bowl.
    • Let sit for 1 minute, then whisk until smooth. Cool for 10-15 minutes.
  • Assemble the Cookies
    • Spread a layer of ganache over the frosted cookies. Let set at room temperature or refrigerate until ganache firms up.
