Ingredients
- 3 cups cornflakes
- 1 cup mini marshmallows
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions

- Once melted, remove the saucepan from heat and stir in the vanilla extract.
- Add the mini marshmallows to the mixture and stir until they are fully melted and combined.
- In a large mixing bowl, pour the cornflakes and gently fold in the melted mixture until all the cornflakes are evenly coated.
- If using, fold in the chocolate chips until well distributed.
- Grease a 9×13 inch baking dish with cooking spray or butter. Pour the cornflake mixture into the dish and press it down evenly with a spatula or your hands.
- Allow the treats to cool at room temperature for about 30 minutes or until set. Cut into squares and serve.
Notes
- For a chocolatey twist, drizzle melted chocolate over the top before cutting into squares.
- Substitute almond butter or sunflower seed butter for a nut-free version.
