Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or olive oil.
  2. In a large mixing bowl, combine the cottage cheese, eggs, cheddar cheese, bell peppers, green onions, garlic powder, salt, black pepper, and paprika. Whisk until well combined.
  3. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
