Ingredients
- 1 cup cottage cheese
- 6 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or olive oil.
- In a large mixing bowl, combine the cottage cheese, eggs, cheddar cheese, bell peppers, green onions, garlic powder, salt, black pepper, and paprika. Whisk until well combined.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let them cool for a few minutes before gently removing the egg bites from the muffin tin.

- For added flavor, mix in cooked bacon, ham, or spinach to the egg mixture.
