Ingredients
- 1 cup cottage cheese
- 1/2 cup creamy peanut butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup heavy whipping cream
Instructions
- In a blender or food processor, combine the cottage cheese, peanut butter, cocoa powder, honey (or maple syrup), vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides as needed.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cottage cheese mixture until fully combined and smooth.
- Spoon the mousse into serving dishes and refrigerate for at least 1 hour to allow it to set.
- Serve chilled, garnished with chocolate shavings or chopped nuts if desired.
Notes
- For a chocolate chip variation, fold in 1/4 cup of mini chocolate chips before refrigerating.
- Substitute almond butter for peanut butter for a different flavor profile, or use a sugar substitute for a lower-calorie option.
