Ingredients
- 2 cups cottage cheese
- 1 cup shredded mozzarella cheese
- 1 cup chopped spinach (fresh or frozen)
- 1 cup diced bell peppers (any color)
- 1 cup diced zucchini
- 1/2 cup chopped onion
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional for topping)
- 1 tablespoon olive oil (for greasing the baking dish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine the cottage cheese, mozzarella cheese, chopped spinach, diced bell peppers, diced zucchini, chopped onion, eggs, garlic powder, onion powder, oregano, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Pour the mixture into the prepared baking dish, spreading it out evenly. If using breadcrumbs, sprinkle them evenly over the top for added texture.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and the edges are bubbly.
- Remove from the oven and let it cool for about 5 minutes before slicing and serving.

- For added flavor, mix in some chopped fresh herbs like basil or parsley.
- Substitute the vegetables with your favorites, such as mushrooms, broccoli, or cherry tomatoes, to customize the bake to your taste.
