Description

A delightful and cozy peach cobbler topped with an easy buttery brown sugar biscuit topping, perfect for any occasion.


Ingredients

  • 4 cups fresh or frozen peaches, sliced
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, lemon juice, cinnamon, and vanilla extract. Toss until the peaches are well coated.
  3. Pour the peach mixture into a greased 9×13-inch baking dish.
  4. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup granulated sugar.
  5. Stir in the melted butter and milk until just combined. The batter will be thick.
  6. Drop spoonfuls of the biscuit batter over the peach mixture, covering as much of the fruit as possible.
  7. Sprinkle the brown sugar evenly over the top of the biscuit batter.
  8. Bake in the preheated oven for 35-40 minutes, or until the biscuit topping is golden brown and a toothpick inserted into the biscuit comes out clean.
  9. Allow to cool for about 10 minutes before serving.

Notes

  • For a twist, try adding a teaspoon of nutmeg to the peach mixture for extra warmth.
  • You can also substitute half of the peaches with blueberries or raspberries for a mixed berry cobbler.
