Description

Cozy Pineapple Coconut Bread is a delicious tropical treat that combines the flavors of pineapple and coconut for a moist and flavorful loaf.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened shredded coconut
  • 1 cup crushed pineapple, drained
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and shredded coconut until well combined.
  3. In another bowl, mix the melted butter, eggs, vanilla extract, and buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix; a few lumps are okay.
  5. Fold in the drained crushed pineapple until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a tropical twist, add 1/2 cup of chopped macadamia nuts or walnuts to the batter for added crunch.
  • Drizzle a simple glaze made of powdered sugar and pineapple juice over the cooled bread for extra sweetness and flavor.
