Ingredients

  • 1 cup cooked crab meat, shredded
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked rice
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon Old Bay seasoning
  • 4 large bell peppers (any color)
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a large mixing bowl, combine the crab meat, chopped shrimp, cooked rice, cream cheese, cheddar cheese, green onions, mayonnaise, lemon juice, garlic powder, Old Bay seasoning, salt, and pepper. Mix until well combined.
  4. Spoon the seafood mixture into each bell pepper, packing it down gently. If desired, sprinkle breadcrumbs on top for added crunch.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are golden brown.
  7. Let cool for a few minutes before serving.
