Description

This Crack Corn Casserole is rich, creamy, cheesy, and downright addictive! Loaded with sweet corn, cream cheese, crispy bacon, ranch seasoning, and melty cheddar Jack, it’s the ultimate crowd-pleasing side dish for holidays, potlucks, or weeknight comfort meals.


Ingredients

  • 2 tablespoons butter

  • 2 (12-ounce) packages frozen corn

  • 1 package ranch seasoning mix

  • 1 (8-ounce) package cream cheese, cubed

  • 1 cup bacon bits or 4 strips cooked bacon, chopped

  • 2 cups shredded cheddar Jack cheese, divided


Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C).

  • Sauté the Corn:
    In a large skillet over medium heat, melt the butter. Add frozen corn and cook until softened, about 5–7 minutes.

  • Make It Creamy:
    Stir in the cubed cream cheese and cook, stirring frequently, until the cheese has melted and combined with the corn.

  • Add the Flavor:
    Sprinkle in the ranch seasoning and stir in the chopped bacon. Mix well to distribute everything evenly.

  • Cheese It Up:
    Remove the skillet from heat and stir in 1 cup of shredded cheddar Jack cheese.

  • Bake the Casserole:
    Transfer the mixture to a greased baking dish. Top with the remaining 1 cup of cheese.

 

  • Bake Until Bubbly:
    Bake uncovered for 20–30 minutes, or until the top is golden, melted, and bubbly.

Notes

  • Fresh or canned corn can be used in place of frozen—just adjust sauté time accordingly.

  • Make it spicy by adding a dash of cayenne pepper or chopped jalapeños.

  • For crispier bacon texture, reserve some to sprinkle on top after baking.
