Description
Cranberry Cream Cheese Pinwheels are a delightful snack made with a creamy filling and rolled in tortillas, perfect for parties or gatherings.
Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup dried cranberries, chopped
- 1/4 cup green onions, finely sliced
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 4 large flour tortillas (10-inch size)
- 1/2 cup chopped pecans (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, chopped dried cranberries, green onions, garlic powder, and salt. Mix until well blended and smooth.
- Lay one tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly over the tortilla, leaving about 1/2 inch of space around the edges.
- If using, sprinkle a layer of chopped pecans over the cream cheese mixture.
- Starting from one end, carefully roll the tortilla tightly into a log shape. Repeat with the remaining tortillas and cream cheese mixture.
- Once all tortillas are rolled, wrap each log in plastic wrap and refrigerate for at least 1 hour to firm up.
- After chilling, remove the plastic wrap and slice each log into 1-inch thick pinwheels. Arrange on a serving platter and garnish with fresh parsley if desired.
Notes
- For a festive twist, try adding a tablespoon of orange zest to the cream cheese mixture for a citrusy flavor.
- Alternatively, substitute the dried cranberries with chopped dried apricots or raisins for a different taste.
