Cranberry Orange Muffins with Streusel Topping delightfully burst with flavor!
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen cranberries, chopped
- 1 tablespoon orange zest
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- For the streusel topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar, packed
- 1/4 cup unsalted butter, cold and cubed
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Stir in the chopped cranberries and orange zest until well combined.
- In another bowl, mix the melted butter, egg, buttermilk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.
- In a small bowl, prepare the streusel topping by combining the flour, brown sugar, cold butter, and cinnamon. Use a fork or your fingers to mix until crumbly.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- This recipe makes 12 muffins.
- For added flavor, try substituting half of the cranberries with chopped walnuts or pecans.
- You can also drizzle a simple glaze made from powdered sugar and orange juice over the cooled muffins for an extra touch of sweetness.
