Cranberry Orange Muffins with Streusel Topping delightfully burst with flavor!


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1 tablespoon orange zest
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Stir in the chopped cranberries and orange zest until well combined.
  3. In another bowl, mix the melted butter, egg, buttermilk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.
  5. In a small bowl, prepare the streusel topping by combining the flour, brown sugar, cold butter, and cinnamon. Use a fork or your fingers to mix until crumbly.
  6. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

  • This recipe makes 12 muffins.
  • For added flavor, try substituting half of the cranberries with chopped walnuts or pecans.
