Description

Delicious and healthy cranberry pecan praline cookies made with oats, almond flour, and almond butter.


Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/2 cup pecans, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond flour, chopped pecans, chopped cranberries, cinnamon, and salt. Mix well to combine all the dry ingredients.
  2. In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until everything is well combined and sticky.
  4. Using your hands, form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  5. Flatten each ball slightly with your fingers to form a cookie shape.
  6. Refrigerate the cookies for at least 30 minutes to help them set.
  7. Once set, enjoy immediately or store in an airtight container in the refrigerator for up to one week.

Notes
