Description
Delicious and healthy cranberry pecan praline cookies made with oats, almond flour, and almond butter.
Ingredients
- 1 cup rolled oats
- 1 cup almond flour
- 1/2 cup pecans, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond flour, chopped pecans, chopped cranberries, cinnamon, and salt. Mix well to combine all the dry ingredients.
- In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until everything is well combined and sticky.
- Using your hands, form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Flatten each ball slightly with your fingers to form a cookie shape.
- Refrigerate the cookies for at least 30 minutes to help them set.
- Once set, enjoy immediately or store in an airtight container in the refrigerator for up to one week.
Notes
- For a chocolate twist, add 1/4 cup of mini chocolate chips to the mixture before forming the cookies.
- Substitute walnuts or almonds for the pecans for a different nut flavor.
