Description

A refreshing and delightful Cranberry Salad with Fresh Orange and Pecan that tantalizes your taste buds with its sweet and tangy flavors.

Ingredients

  • 2 cups fresh cranberries, rinsed and sorted
  • 1 cup granulated sugar
  • 1 cup water
  • 1 medium orange, peeled and diced
  • 1 cup pecans, chopped
  • 1 cup mini marshmallows
  • 1 cup whipped topping

Instructions

  1. In a medium saucepan, combine the fresh cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally. Once boiling, reduce heat and simmer for about 10 minutes, or until the cranberries burst and the mixture thickens slightly. Remove from heat and let cool completely.
  2. Once the cranberry mixture is cool, fold in the diced orange, chopped pecans, mini marshmallows, and whipped topping until well combined.
  3. Transfer the salad to a serving bowl and refrigerate for at least 2 hours to allow the flavors to meld.
  4. Serve chilled, garnished with additional pecans if desired.

Notes

  • For a tangier flavor, add a tablespoon of lemon juice to the cranberry mixture before cooling.
  • Substitute walnuts for pecans or use dried cranberries instead of fresh for a different texture.
