Instructions

  1. Sauté the Vegetables:
    • In a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat.
    • Add the carrots, potato, onion, and celery. Stir to coat with butter and sauté for about 5 minutes until slightly softened.
  2. Add Broth and Spices:

  3. Blend the Soup:
    • Remove the pot from the heat and let it cool slightly for 10–15 minutes.
    • Blend the soup in batches in a blender or use an immersion blender directly in the pot until smooth and creamy.
  4. Add Cream and Seasonings:
    • Return the blended soup to the pot. Stir in the heavy whipping cream, curry powder, salt, and black pepper.
    • Heat the soup over low heat for another 10 minutes, stirring occasionally, until warmed through.
  5. Serve and Garnish:
    • Ladle the soup into bowls and garnish with a drizzle of cream, fresh parsley, or a sprinkle of paprika for color.
    • Serve warm with crusty bread or a fresh side salad.
