Instructions
- Sauté the Vegetables:
- In a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat.
- Add the carrots, potato, onion, and celery. Stir to coat with butter and sauté for about 5 minutes until slightly softened.
- Add Broth and Spices:

- Blend the Soup:
- Remove the pot from the heat and let it cool slightly for 10–15 minutes.
- Blend the soup in batches in a blender or use an immersion blender directly in the pot until smooth and creamy.
- Add Cream and Seasonings:
- Return the blended soup to the pot. Stir in the heavy whipping cream, curry powder, salt, and black pepper.
- Heat the soup over low heat for another 10 minutes, stirring occasionally, until warmed through.
- Serve and Garnish:
- Ladle the soup into bowls and garnish with a drizzle of cream, fresh parsley, or a sprinkle of paprika for color.
- Serve warm with crusty bread or a fresh side salad.
