Description
A deliciously easy recipe for Creamed Spinach Bake that combines fresh spinach with creamy cheeses and a crunchy topping.
Ingredients
- 2 pounds fresh spinach, washed and trimmed
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 375°F.
- In a large pot, bring water to a boil and blanch the spinach for 2-3 minutes until wilted. Drain and rinse under cold water to stop the cooking process. Squeeze out excess moisture and chop the spinach.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft. Add the garlic and cook for an additional minute.
- Stir in the heavy cream, Parmesan cheese, salt, pepper, and nutmeg. Cook for 2-3 minutes until the mixture thickens slightly.
- Add the chopped spinach to the skillet and mix well until the spinach is evenly coated with the creamy mixture.
- Transfer the spinach mixture to a greased 9×13 inch baking dish. Sprinkle the mozzarella cheese evenly over the top.
- In a small bowl, mix the breadcrumbs with the melted butter and sprinkle over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a lighter version, substitute half-and-half for the heavy cream and use low-fat cheese.
- For added flavor, mix in some cooked bacon or sautéed mushrooms before baking.
