Description

A deliciously easy recipe for Creamed Spinach Bake that combines fresh spinach with creamy cheeses and a crunchy topping.


Ingredients

  • 2 pounds fresh spinach, washed and trimmed
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F.
  2. In a large pot, bring water to a boil and blanch the spinach for 2-3 minutes until wilted. Drain and rinse under cold water to stop the cooking process. Squeeze out excess moisture and chop the spinach.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft. Add the garlic and cook for an additional minute.
  4. Stir in the heavy cream, Parmesan cheese, salt, pepper, and nutmeg. Cook for 2-3 minutes until the mixture thickens slightly.
  5. Add the chopped spinach to the skillet and mix well until the spinach is evenly coated with the creamy mixture.
  6. Transfer the spinach mixture to a greased 9×13 inch baking dish. Sprinkle the mozzarella cheese evenly over the top.
  7. In a small bowl, mix the breadcrumbs with the melted butter and sprinkle over the cheese layer.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Let it cool for a few minutes before serving.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream and use low-fat cheese.
  • For added flavor, mix in some cooked bacon or sautéed mushrooms before baking.
