Instructions

Season chicken thighs on both sides with salt, pepper, and Italian herb seasoning.

In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Sear the chicken thighs skin-side down for about 5 minutes, until the skin is crisp and golden.

Transfer the seared chicken thighs (skin-side up) to a foil-lined baking sheet. Bake for 20 minutes or until cooked through and internal temperature reaches 165°F.

While the chicken bakes, heat 1 tablespoon of vegetable oil in the same skillet over medium heat. Add the mushrooms and cook for 3 minutes, flipping halfway, until golden.
