Ingredients

For the Chicken Thighs:

  • 4 bone-in, skin-on chicken thighs

  • Salt and pepper, to taste

  • Italian herb seasoning mix (such as dried thyme, oregano, and basil)

  • 1 tablespoon vegetable oil (for searing)

For the Creamy Bacon Mushroom Thyme Sauce:

  • 1 tablespoon vegetable oil (for mushrooms)

  • 8 oz mushrooms, sliced

  • 4 slices cooked bacon, chopped

  • 1 cup heavy cream

  • ⅛ teaspoon salt (adjust to taste)

  • 5 sprigs fresh thyme, snipped (plus extra for garnish)


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Season chicken thighs on both sides with salt, pepper, and Italian herb seasoning.

  3. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Sear the chicken thighs skin-side down for about 5 minutes, until the skin is crisp and golden.

  4. Transfer the seared chicken thighs (skin-side up) to a foil-lined baking sheet. Bake for 20 minutes or until cooked through and internal temperature reaches 165°F.

  5. While the chicken bakes, heat 1 tablespoon of vegetable oil in the same skillet over medium heat. Add the mushrooms and cook for 3 minutes, flipping halfway, until golden.

  6. Add chopped bacon to the skillet. Stir in heavy cream, salt, and snipped fresh thyme. Bring to a gentle boil, then reduce heat and simmer for 2 minutes to thicken. Adjust seasoning to taste.

  7. Once the chicken is done, return it to the skillet and spoon the creamy mushroom bacon sauce over the top. Garnish with extra thyme if desired and serve immediately.
