A delightful and creamy cheesecake topped with a mix of fresh berries, perfect for any occasion.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8-ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- Add sour cream to the cream cheese mixture and mix until smooth.
- In a small saucepan, combine mixed berries, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently, until the mixture starts to thicken, about 5-7 minutes. Remove from heat and let cool slightly.
- Pour the cream cheese mixture over the cooled crust in the springform pan. Spoon the berry mixture on top of the cream cheese layer, swirling it gently with a knife for a marbled effect.
- Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Then, remove from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours, or overnight, before serving.
Notes
- For a lighter version, substitute low-fat cream cheese and sour cream.
- For added flavor, mix in a teaspoon of almond extract with the cream cheese mixture.
