Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  4. Add sour cream to the cream cheese mixture and mix until smooth.
  5. In a small saucepan, combine mixed berries, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently, until the mixture starts to thicken, about 5-7 minutes. Remove from heat and let cool slightly.
  6. Pour the cream cheese mixture over the cooled crust in the springform pan. Spoon the berry mixture on top of the cream cheese layer, swirling it gently with a knife for a marbled effect.
  7. Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Then, remove from the oven and let it cool to room temperature.
  9. Refrigerate for at least 4 hours, or overnight, before serving.

  • For a lighter version, substitute low-fat cream cheese and sour cream.
