Description

Creamy Broccoli with Potatoes is a comforting dish that combines tender broccoli and potatoes in a rich and creamy sauce, perfect as a side or main vegetarian dish.

Ingredients

  • 2 cups broccoli florets
  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10 minutes, or until tender.
  2. Add the broccoli florets to the pot and cook for an additional 3-4 minutes until the broccoli is bright green and tender.
  3. Drain the potatoes and broccoli, then return them to the pot.
  4. In a small saucepan, melt the butter over medium heat. Stir in the heavy cream, garlic powder, onion powder, salt, and pepper. Bring to a gentle simmer.
  5. Pour the cream mixture over the potatoes and broccoli. Stir in the shredded cheddar cheese until melted and well combined.
  6. If using, sprinkle the grated Parmesan cheese on top and stir gently to mix.
  7. Serve warm as a side dish or a main vegetarian dish.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk or a plant-based milk.
  • You can also add cooked bacon or ham for extra flavor and protein.
  • For a spicy kick, sprinkle red pepper flakes on top before serving.
