Description

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell peppers, and cherry tomatoes. Drizzle with olive oil and season with garlic powder, onion powder, oregano, salt, and pepper. Toss until the vegetables are well coated.
  3. In a separate bowl, mix the heavy cream with half of the cheddar cheese and half of the mozzarella cheese. Stir until well combined.
  4. Pour the creamy cheese mixture over the seasoned vegetables and stir gently to combine. If using breadcrumbs, sprinkle them evenly over the top of the mixture.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cheddar and mozzarella cheese.
  6. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown. Let it cool for 5 minutes before serving.
