Ingredients

  • 2 tablespoons avocado oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, chopped
  • 2 stalks of celery, chopped
  • 1 pound chicken thighs, boneless and skinless, cut into small chunks
  • 4 cups low-sodium chicken stock
  • 2 medium Yukon Gold potatoes, peeled and cubed
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup coconut milk
  • 2 tablespoons chives, finely chopped (for garnish)

Instructions

  1. Begin by warming the avocado oil in a large saucepan over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent. Incorporate the minced garlic and cook for an additional minute until aromatic.
  2. Toss in the chopped carrots and celery, stirring occasionally for about 6 minutes until they start to soften.
  3. Introduce the chicken thighs to the pot, cooking until they are browned and no longer pink, which should take around 6-8 minutes.
  4. Pour in the chicken stock and add the cubed potatoes, corn, oregano, basil, salt, and pepper. Bring the mixture to a gentle boil, then lower the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  5. Mix in the coconut milk and allow the chowder to warm through for another 5 minutes. Taste and adjust the seasoning as necessary.
  6. Ladle the chowder into bowls and sprinkle with fresh chives before serving.
