Description
A quick and delicious creamy chicken gnocchi skillet dinner that can be prepared in just 30 minutes, perfect for a weeknight meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 1 pound potato gnocchi
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
- Add the cherry tomatoes and spinach to the skillet. Cook for 2-3 minutes until the tomatoes soften and the spinach wilts.
- Stir in the Italian seasoning, heavy cream, and chicken broth. Bring the mixture to a simmer.
- Add the gnocchi to the skillet and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
- Return the cooked chicken to the skillet and stir in the Parmesan cheese until melted and combined.
- Serve immediately, garnished with fresh basil if desired.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- You can also add other vegetables like zucchini or bell peppers for extra flavor and nutrition.
- If you prefer a spicy kick, add a pinch of red pepper flakes when cooking the garlic.
