Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 pound potato gnocchi
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
  3. Add the cherry tomatoes and spinach to the skillet. Cook for 2-3 minutes until the tomatoes soften and the spinach wilts.
  4. Stir in the Italian seasoning, heavy cream, and chicken broth. Bring the mixture to a simmer.
  5. Add the gnocchi to the skillet and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
  6. Return the cooked chicken to the skillet and stir in the Parmesan cheese until melted and combined.
  7. Serve immediately, garnished with fresh basil if desired.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • You can also add other vegetables like zucchini or bell peppers for extra flavor and nutrition.
