Ingredients
- 8 ounces penne pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, softened
- 1/4 cup fresh parsley, chopped
- 1 teaspoon lemon juice
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken pieces with salt and black pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Reduce the heat to low and add the softened butter, stirring until melted.
- Stir in the chopped parsley and lemon juice, then add the heavy cream. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally.
- Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together until well combined. Stir in the grated Parmesan cheese and red pepper flakes, if using. Cook for an additional 2-3 minutes until heated through.
- Serve immediately, garnished with extra parsley if desired.

- For a lighter version, substitute half-and-half for heavy cream.
