A delicious and creamy bake featuring zucchini, chicken, and cottage cheese, perfect for a comforting meal.
Ingredients
- 2 medium zucchinis, sliced into rounds
 - 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
 - 1 cup cottage cheese
 - 1 cup shredded mozzarella cheese
 - 1/2 cup grated Parmesan cheese
 - 2 cloves garlic, minced
 - 1 teaspoon Italian seasoning
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1 tablespoon olive oil
 - 1/4 cup chopped fresh parsley (for garnish)
 
Instructions
- Preheat your oven to 375°F (190°C).
 - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
 - Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with Italian seasoning, salt, and black pepper.
 - In a large mixing bowl, combine the sliced zucchinis, cottage cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well.
 - In a greased 9×13-inch baking dish, layer the zucchini mixture evenly on the bottom. Top with the cooked chicken.
 - Sprinkle the remaining mozzarella and Parmesan cheeses over the chicken.
 - Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
 - Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
 
Notes
- For added flavor, consider mixing in some chopped spinach or bell peppers with the zucchini.
 - You can substitute the chicken with cooked ground turkey or shredded rotisserie chicken for a quicker option.
