A delicious and easy-to-make creamy Tuscan chicken dish cooked in a crockpot, perfect for a simple dinner.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 8 ounces fettuccine pasta (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Place them in the crockpot.
  2. In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, olive oil, and minced garlic. Pour this mixture over the chicken in the crockpot.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. About 30 minutes before serving, stir in the fresh spinach and Parmesan cheese. Allow it to cook until the spinach is wilted.
  5. If desired, cook the fettuccine pasta according to package instructions while the chicken is finishing. Drain and serve with the creamy Tuscan chicken on top.
