Description
A delicious and easy-to-make creamy Tuscan chicken dish cooked in a crockpot, perfect for a simple dinner.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 8 ounces fettuccine pasta (optional)
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Place them in the crockpot.
- In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, olive oil, and minced garlic. Pour this mixture over the chicken in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- About 30 minutes before serving, stir in the fresh spinach and Parmesan cheese. Allow it to cook until the spinach is wilted.
- If desired, cook the fettuccine pasta according to package instructions while the chicken is finishing. Drain and serve with the creamy Tuscan chicken on top.
Notes
- For a lighter version, substitute heavy cream with half-and-half or coconut milk.
- Add sliced mushrooms or bell peppers for extra vegetables and flavor.
