A creamy and flavorful dish made with chicken, tomatoes, and spinach, cooked slowly in a crockpot for a delightful meal.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Cooked pasta or rice, for serving
Instructions
- Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning. Place them in the crockpot.
- In a small bowl, mix together the olive oil, minced garlic, and red pepper flakes (if using). Pour this mixture over the chicken.
- Add the cherry tomatoes and fresh spinach to the crockpot, spreading them evenly over the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken from the crockpot and shred it using two forks.
- Stir in the heavy cream and Parmesan cheese into the remaining sauce in the crockpot until well combined.
- Return the shredded chicken to the crockpot and mix until the chicken is coated in the creamy sauce.
- Serve over cooked pasta or rice and enjoy!
Notes
- For a lighter version, substitute heavy cream with Greek yogurt or a low-fat cream alternative.
- Add sliced mushrooms or bell peppers for extra vegetables and flavor.
