Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked pasta or rice, for serving

Instructions

  1. Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning. Place them in the crockpot.
  2. In a small bowl, mix together the olive oil, minced garlic, and red pepper flakes (if using). Pour this mixture over the chicken.
  3. Add the cherry tomatoes and fresh spinach to the crockpot, spreading them evenly over the chicken.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once cooked, remove the chicken from the crockpot and shred it using two forks.
  6. Stir in the heavy cream and Parmesan cheese into the remaining sauce in the crockpot until well combined.
  7. Return the shredded chicken to the crockpot and mix until the chicken is coated in the creamy sauce.
  8. Serve over cooked pasta or rice and enjoy!
