Ingredients
- 1 pound potato gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 5 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and stir in the lemon juice, dried oregano, salt, and black pepper. Bring to a gentle simmer.
- Add the cooked gnocchi to the skillet, stirring gently to combine. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the crumbled feta cheese and grated Parmesan cheese until melted and creamy.
- Serve immediately, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
- Add cooked chicken or shrimp for extra protein and flavor. You can also incorporate sun-dried tomatoes for a tangy twist.
