Description

A delightful recipe for creamy gnocchi with spinach and feta, perfect for a comforting meal.

Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 5 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and stir in the lemon juice, dried oregano, salt, and black pepper. Bring to a gentle simmer.
  5. Add the cooked gnocchi to the skillet, stirring gently to combine. Cook for an additional 2-3 minutes until heated through.
  6. Remove from heat and stir in the crumbled feta cheese and grated Parmesan cheese until melted and creamy.
  7. Serve immediately, garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and reduce the amount of cheese.
  • Add cooked chicken or shrimp for extra protein and flavor. You can also incorporate sun-dried tomatoes for a tangy twist.
