Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 can (11 ounces) mandarin oranges, drained and chopped
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chopped mandarin oranges gently.
  6. Pour the batter into the prepared cake pan and spread it evenly.
  7. In another bowl, combine the brown sugar, rolled oats, and ground cinnamon. Sprinkle this crumble mixture evenly over the top of the cake batter.
