Description

Delicious and creamy mushroom and spinach stuffed pastry bites, perfect for appetizers or snacks.


Ingredients

  • 1 cup fresh spinach, chopped
  • 8 ounces mushrooms, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 package (1 sheet) puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced mushrooms, salt, pepper, and thyme. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine the mushroom mixture with cream cheese and Parmesan cheese, stirring until well combined.
  6. On a lightly floured surface, roll out the puff pastry sheet to smooth out creases. Cut the pastry into 3-inch squares.
  7. Place a tablespoon of the mushroom and spinach filling in the center of each pastry square. Fold the corners over the filling to create a pocket and pinch to seal.
  8. Place the stuffed pastries on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
  10. Remove from the oven and let cool slightly before serving.

Notes

  • For a richer flavor, add a pinch of nutmeg to the filling.
