Creamy Mushroom Stuffed Sweet Potatoes are a delicious and hearty dish, perfect for a comforting meal.
Ingredients
- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (button or cremini)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 400°F. Wash the sweet potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
- Add the sliced mushrooms, thyme, salt, and pepper to the skillet. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms are browned and any liquid has evaporated.
- Remove the skillet from heat and stir in the cream cheese and Parmesan cheese until well combined.
- Once the sweet potatoes are done baking, let them cool slightly. Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh, creating a cavity for the filling. Mix the scooped sweet potato flesh into the mushroom mixture until well combined.
- Spoon the creamy mushroom filling back into the sweet potato halves. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through.
- Garnish with fresh parsley if desired and serve warm.
Notes
- For a vegan option, substitute cream cheese with a plant-based cream cheese and use nutritional yeast instead of Parmesan.
- Add cooked spinach or kale to the mushroom mixture for extra nutrients and flavor.
