Description

Creamy Mushroom Stuffed Sweet Potatoes are a delicious and hearty dish, perfect for a comforting meal.


Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (button or cremini)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 400°F. Wash the sweet potatoes and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
  2. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
  3. Add the sliced mushrooms, thyme, salt, and pepper to the skillet. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms are browned and any liquid has evaporated.
  4. Remove the skillet from heat and stir in the cream cheese and Parmesan cheese until well combined.
  5. Once the sweet potatoes are done baking, let them cool slightly. Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh, creating a cavity for the filling. Mix the scooped sweet potato flesh into the mushroom mixture until well combined.
  6. Spoon the creamy mushroom filling back into the sweet potato halves. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through.
  7. Garnish with fresh parsley if desired and serve warm.

  • For a vegan option, substitute cream cheese with a plant-based cream cheese and use nutritional yeast instead of Parmesan.
