Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 can (20 oz) crushed pineapple with juice
- 1 cup chopped pecans
- 1 package (8 oz) cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup chopped pecans (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, combine flour, sugar, baking soda, and eggs.
- Add the crushed pineapple (with juice), vanilla, and pecans. Mix until just combined.
- Pour into the prepared baking pan.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting.
- In a medium bowl, beat the cream cheese and butter until smooth and creamy.
- Add powdered sugar and vanilla, mixing until fluffy.
- Spread the frosting evenly over the cooled cake.
- Sprinkle with chopped pecans on top.
- Chill for at least 30 minutes before slicing for best texture.
