Description
A rich and creamy seafood bisque that combines a variety of seafood with aromatic vegetables and spices for a deliciously comforting dish.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup tomato paste
- 4 cups seafood stock
- 1 cup heavy cream
- 1 pound mixed seafood (shrimp, scallops, and crab meat)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the dried thyme, cayenne pepper, and tomato paste. Cook for another 2 minutes, stirring frequently.
- Pour in the seafood stock and bring the mixture to a simmer. Allow it to cook for about 15 minutes to develop the flavors.
- Reduce the heat to low and stir in the heavy cream.
- Add the mixed seafood to the pot and cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped fresh parsley.
Notes
- For a spicier kick, add a dash of hot sauce or increase the cayenne pepper.
- Substitute the seafood with your favorite fish or use only one type of seafood for a simpler version.
