Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup tomato paste
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 pound mixed seafood (shrimp, scallops, and crab meat)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Stir in the dried thyme, cayenne pepper, and tomato paste. Cook for another 2 minutes, stirring frequently.
  3. Pour in the seafood stock and bring the mixture to a simmer. Allow it to cook for about 15 minutes to develop the flavors.
  4. Reduce the heat to low and stir in the heavy cream.
  5. Add the mixed seafood to the pot and cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped fresh parsley.
