Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and bring the mixture to a simmer.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Reduce the heat to low and add the Parmesan cheese and lemon juice, stirring until the cheese is melted and the sauce is creamy.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Serve immediately, garnished with additional Parmesan if desired.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Add sun-dried tomatoes or mushrooms for extra flavor and texture.
