Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and bring the mixture to a simmer.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Reduce the heat to low and add the Parmesan cheese and lemon juice, stirring until the cheese is melted and the sauce is creamy.
  6. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Serve immediately, garnished with additional Parmesan if desired.
