Ingredients
- 8 ounces cheese tortellini
- 4 slices bacon, chopped
- 1 tablespoon olive oil
- 1 cup asparagus, cut into 1-inch pieces
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the cheese tortellini according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on paper towels, leaving the drippings in the skillet.
- Add olive oil to the skillet with the bacon drippings. Add the asparagus and sauté for about 3-4 minutes until tender.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Add the cooked tortellini, frozen peas, and crispy bacon to the skillet. Toss gently to combine and heat through. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley.
