Ingredients

  • 8 ounces cheese tortellini
  • 4 slices bacon, chopped
  • 1 tablespoon olive oil
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on paper towels, leaving the drippings in the skillet.
  3. Add olive oil to the skillet with the bacon drippings. Add the asparagus and sauté for about 3-4 minutes until tender.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
  6. Add the cooked tortellini, frozen peas, and crispy bacon to the skillet. Toss gently to combine and heat through. Season with salt and pepper to taste.
  7. Serve immediately, garnished with fresh parsley.
