Ingredients
- 2 large chicken breasts (about 1 pound), boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh basil, chopped (optional)
Instructions
- Begin by seasoning the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the cherry tomatoes and sauté for 2-3 minutes until they begin to soften.
- Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
- Reduce the heat to medium-low and pour in the heavy cream, stirring to combine.
- Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.
- Return the cooked chicken to the skillet, spooning the sauce over the chicken. Let it simmer for an additional 2-3 minutes to heat through.
- If desired, garnish with fresh basil before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Serve over cooked pasta or rice for a heartier meal.
