Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 ounces penne pasta
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the cherry tomatoes and spinach to the skillet, cooking until the spinach is wilted, about 2-3 minutes.
  4. Stir in the Italian seasoning, heavy cream, and chicken broth. Bring the mixture to a simmer.
  5. Add the penne pasta to the skillet, stirring to combine. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
  6. Once the pasta is cooked, return the chicken to the skillet and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and use whole wheat pasta.
