A delicious and creamy Tuscan chicken pasta skillet recipe that combines tender chicken, fresh spinach, and cherry tomatoes in a rich sauce.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces penne pasta
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes and spinach to the skillet, cooking until the spinach is wilted, about 2-3 minutes.
- Stir in the Italian seasoning, heavy cream, and chicken broth. Bring the mixture to a simmer.
- Add the penne pasta to the skillet, stirring to combine. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
- Once the pasta is cooked, return the chicken to the skillet and stir in the grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil if desired.
Notes
- For a lighter version, substitute half-and-half for heavy cream and use whole wheat pasta.
- Add sautéed mushrooms or bell peppers for extra flavor and nutrition.
