Description

Delightful Crème Brûlée Cookie Bars that combine the rich flavors of crème brûlée with the chewy texture of cookie bars.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the cookie dough evenly in the prepared baking pan. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. While the bars are baking, prepare the crème brûlée topping. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and let it cool slightly.
  8. Once the bars are out of the oven, pour the warm heavy cream evenly over the top. Let the bars cool completely in the pan.
  9. Once cooled, sprinkle the 1/4 cup of granulated sugar evenly over the top of the bars. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden layer. If you don’t have a torch, you can place the bars under the broiler for 1-2 minutes, watching closely to prevent burning.
  10. Allow the caramelized sugar to cool and harden before cutting the bars into squares.

Notes

  • For added flavor, mix in 1/2 teaspoon of almond extract or a tablespoon of orange zest into the cookie dough.
  • Top the bars with fresh berries or a drizzle of chocolate sauce before serving for an extra touch.
