Delightful Crème Brûlée Cookie Bars that combine the rich flavors of crème brûlée with the chewy texture of cookie bars.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup heavy cream
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread the cookie dough evenly in the prepared baking pan. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the crème brûlée topping. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and let it cool slightly.
- Once the bars are out of the oven, pour the warm heavy cream evenly over the top. Let the bars cool completely in the pan.
- Once cooled, sprinkle the 1/4 cup of granulated sugar evenly over the top of the bars. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden layer. If you don’t have a torch, you can place the bars under the broiler for 1-2 minutes, watching closely to prevent burning.
- Allow the caramelized sugar to cool and harden before cutting the bars into squares.
Notes
- For added flavor, mix in 1/2 teaspoon of almond extract or a tablespoon of orange zest into the cookie dough.
- Top the bars with fresh berries or a drizzle of chocolate sauce before serving for an extra touch.
