Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup apples, diced (preferably Granny Smith or Honeycrisp)
- 1/2 cup raisins or dried cranberries
- 1/4 cup red onion, thinly sliced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, apples, raisins (or cranberries), and red onion. Toss gently to mix all the ingredients evenly.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, and Dijon mustard until smooth.
- Pour the dressing over the cabbage mixture and toss until everything is well coated.
- Season with salt and pepper to taste, mixing again to combine.
- For best flavor, cover and refrigerate the coleslaw for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled as a side dish or topping for sandwiches and burgers.
