Ingredients
- 8 cups fresh mushrooms, cleaned and halved
- 4 tablespoons unsalted butter, melted
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 425°F.
- In a large bowl, combine the melted butter, olive oil, minced garlic, salt, black pepper, and thyme.
- Add the halved mushrooms to the bowl and toss until they are well coated with the mixture.
- Spread the mushrooms in a single layer on a large baking sheet.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are golden brown and crispy.
- Remove from the oven and drizzle with lemon juice.
- Garnish with fresh parsley before serving.
Notes
- For extra crispiness, broil the mushrooms for an additional 2-3 minutes after roasting.
- Try adding a sprinkle of grated Parmesan cheese during the last few minutes of roasting for a cheesy twist.
