- Begin by slicing the chicken breasts in half horizontally to create thinner cutlets. Place the cutlets between two pieces of plastic wrap and gently pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
- Set up a breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs, Parmesan cheese, and garlic powder.
- Dredge each chicken cutlet in the flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded chicken cutlets in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
