Ingredients

For the Filling:

  • 1.7 kg chicken mince
  • 420 g sweetcorn (fresh or frozen)
  • 3 mixed peppers, finely chopped
  • 3 spring onions, finely chopped
  • 450 g cabbage, shredded
  • 1 head garlic (~12 cloves), minced
  • 60 ml rapeseed oil

Spices and Seasonings:

  • 2 tsp cumin seeds
  • 1 tsp cumin powder
  • 3 tsp mustard seeds
  • 2 1/2 tsp chili powder
  • 1/2 tsp turmeric
  • 2 tbsp soy sauce

For the Wrapping:

  • 6 tbsp plain flour
  • 12 tbsp water

Filo pastry (as needed)


Instructions

  1. Prepare the Vegetables:
    • Finely chop the mixed peppers and spring onions.
    • Shred the cabbage and set all the vegetables aside in a large bowl.
  2. Cook the Chicken Filling:
    • Heat rapeseed oil in a large pot over medium-high heat. Add mustard seeds and cumin seeds; let them sizzle for 1 minute.
    • Add the minced garlic and sauté until fragrant.
    • Stir in chicken mince and cook until browned (10-12 minutes).
  3. Add Seasonings and Vegetables:
    • Mix in turmeric, chili powder, cumin powder, sweetcorn, soy sauce, salt, and pepper. Cook for another 6-7 minutes.
    • Turn off the heat and fold in the cabbage, peppers, spring onions, and coriander. Let the mixture cool.
  4. Prepare the Flour Paste:
    • Combine plain flour and water in a small bowl. Whisk until smooth.
  5. Assemble the Spring Rolls:
    • Lay a filo pastry sheet on a clean surface with one corner facing you.
    • Place 1 tablespoon of the chicken mixture near the bottom corner. Roll tightly twice, fold in the sides, and continue rolling.
    • Seal with flour paste and repeat.
  6. Cook the Spring Rolls:
    • Deep-Frying Method: Heat oil in a deep pan over medium-low heat. Fry rolls for 3 minutes per side until golden brown. Drain on paper towels.
    • Air-Frying Method: Preheat air fryer to 375°F (190°C). Lightly brush rolls with oil and air-fry for 8-10 minutes, turning halfway through.
