A delicious and easy-to-make crispy cranberry cobbler that combines tart cranberries with a sweet, buttery topping.
Ingredients
- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 teaspoon cinnamon
- 1/2 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the cranberries, granulated sugar, lemon juice, and vanilla extract. Stir until the cranberries are well coated.
- Spread the cranberry mixture evenly in a greased 9×9-inch baking dish.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Add the melted butter and milk to the dry ingredients, stirring until just combined.
- Pour the batter over the cranberry mixture in the baking dish.
- In a small bowl, mix the rolled oats and brown sugar, then sprinkle this mixture evenly over the batter.
- Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool for at least 10 minutes before serving.
Notes
- This cobbler can be served warm or at room temperature.
- For an extra treat, serve with vanilla ice cream or whipped cream.
- For a twist, try adding a teaspoon of almond extract.
- You can substitute half of the cranberries with blueberries or raspberries for a mixed berry cobbler.
