Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 1/4 cup duck fat
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for about 10 minutes, or until just tender. Drain and let them sit for a few minutes to steam dry.
- In a large mixing bowl, combine the duck fat, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the drained potatoes and toss until they are evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-35 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Remove from the oven and garnish with fresh parsley before serving.

- For extra crispiness, let the potatoes cool for a few minutes after boiling before tossing them in the duck fat.
