Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup duck fat
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for about 10 minutes, or until just tender. Drain and let them sit for a few minutes to steam dry.
