Description
This Cauliflower Crust Pizza is a low-carb, gluten-free delight with a crispy golden crust and all the cheesy goodness you crave. It’s a fun and tasty way to sneak in more veggies while still enjoying your favorite pizza night — and it’s surprisingly easy to make from scratch!
Ingredients
For the crust, you’ll need a medium head of cauliflower (cut into florets), shredded mozzarella cheese, grated Parmesan cheese, one large egg, dried oregano, garlic powder, salt, and black pepper. For the toppings, gather pizza sauce, shredded mozzarella, mini or chopped pepperoni, and optional garnishes like red pepper flakes and fresh basil.
Instructions
-
Preheat your oven to 425°F (220°C). Place cauliflower florets into a food processor and pulse until finely ground into rice-like crumbs.
-
Transfer the ground cauliflower to a microwave-safe bowl and microwave for 5 minutes until soft. Let cool slightly.
-
Wrap the cooked cauliflower in a clean kitchen towel and wring out as much liquid as possible — this step is essential for a firm, crispy crust.
-
In a large mixing bowl, combine the drained cauliflower with shredded mozzarella, grated Parmesan, egg, oregano, garlic powder, salt, and black pepper. Stir until a dough-like consistency forms.
-
Line a baking sheet with parchment paper and press the mixture into an 8 to 10-inch round crust, about ¼ inch thick. Bake for 15 to 20 minutes, or until the crust is golden brown and set.
-
Remove the crust from the oven. Spread the pizza sauce evenly over the top, then sprinkle with mozzarella and arrange the pepperoni slices.
-
Return the pizza to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
-
Garnish with red pepper flakes and fresh basil if desired. Slice and serve hot.
Notes
-
Squeezing out excess moisture from the cauliflower is crucial — the drier the cauliflower, the crispier the crust.
-
You can customize the toppings to fit your preferences — try mushrooms, bell peppers, olives, or arugula.
-
This recipe is naturally gluten-free and keto-friendly.
