Ingredients

  • 2 pounds chicken tenderloins
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder

  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 2 large eggs
  • 1/4 cup buttermilk
  • 2 cups breadcrumbs (panko or regular)
  • Vegetable oil for frying

Instructions

  1. Begin by marinating the chicken tenderloins. In a bowl, whisk together the eggs and buttermilk. Add the chicken and ensure it’s well coated. Cover and refrigerate for at least 30 minutes to 2 hours for best flavor and tenderness.
  2. In a separate shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Mix well.
  3. In another shallow dish, place the breadcrumbs.
  4. Remove the chicken from the refrigerator. Take each tenderloin and first dredge it in the seasoned flour, shaking off any excess.
  5. Next, dip the floured chicken into the egg mixture, allowing any excess to drip off.
  6. Finally, coat the chicken in the breadcrumbs, pressing gently to adhere. Place the coated tenders on a plate.
  7. In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
  8. Carefully add the chicken tenders to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes per side, or until golden brown and cooked through.
  9. Use a slotted spoon to transfer the cooked tenders to a paper towel-lined plate to drain excess oil.
  10. Serve hot with your favorite dipping sauces.
