Ingredients
- 2 pounds chicken tenderloins
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- 2 large eggs
- 1/4 cup buttermilk
- 2 cups breadcrumbs (panko or regular)
- Vegetable oil for frying
Instructions
- Begin by marinating the chicken tenderloins. In a bowl, whisk together the eggs and buttermilk. Add the chicken and ensure it’s well coated. Cover and refrigerate for at least 30 minutes to 2 hours for best flavor and tenderness.
- In a separate shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Mix well.
- In another shallow dish, place the breadcrumbs.
- Remove the chicken from the refrigerator. Take each tenderloin and first dredge it in the seasoned flour, shaking off any excess.
- Next, dip the floured chicken into the egg mixture, allowing any excess to drip off.
- Finally, coat the chicken in the breadcrumbs, pressing gently to adhere. Place the coated tenders on a plate.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
- Carefully add the chicken tenders to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes per side, or until golden brown and cooked through.
- Use a slotted spoon to transfer the cooked tenders to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauces.
