Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- Vegetable oil, for frying
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by slicing the zucchinis into 1/4-inch rounds. Place them on a paper towel and sprinkle with a little salt. Let them sit for about 15 minutes to draw out excess moisture. Pat dry with another paper towel.
- In a shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until hot (around 350°F).
- Dredge each zucchini slice in the flour mixture, shaking off any excess. Dip it into the beaten eggs, then coat it with breadcrumbs, pressing gently to adhere.
- Carefully place the coated zucchini slices into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fried zucchini from the oil and place them on a paper towel-lined plate to drain excess oil.
- Garnish with chopped fresh parsley before serving. Enjoy hot!

- For a spicier kick, add a pinch of cayenne pepper to the flour mixture.
