  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • Vegetable oil, for frying

Instructions

  1. Begin by slicing the zucchinis into 1/4-inch rounds. Place them on a paper towel and sprinkle with a little salt. Let them sit for about 15 minutes to draw out excess moisture. Pat dry with another paper towel.
  2. In a shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.
  3. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until hot (around 350°F).
  4. Dredge each zucchini slice in the flour mixture, shaking off any excess. Dip it into the beaten eggs, then coat it with breadcrumbs, pressing gently to adhere.
  5. Carefully place the coated zucchini slices into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Remove the fried zucchini from the oil and place them on a paper towel-lined plate to drain excess oil.
